ORGANOLEPTIC CHARACTERISTICS

Ruby-red color, on the nose delicate scent of violet and red berries. In the mouth is fresh and persistent.

GRAPE VARIETIES

100% Sangiovese.

VINIFICATION

Alcoholic fermentation with select yeast at controlled temperature of 28 C°. Maceration on the skins for 20 days. Replacement of wine 3 time a day. After the maceration a soft pressing of the skin with manual press

REFINING

12 months in steel barrel.

FOOD PAIRING

Pasta with meat sauce, red meat, aged and semi-aged cheeses. Serving temperature 16 °C.

Microclimate

Particulary season, summer characterized by a really hot season, just 2 day of rain, one in june and one in july. Just this two day give to the vineyard the necessary water to arrive at a really good maturations. Harvest afrter the second part of september
